Lamb's kidney with okra and leek in black bean sauce

A delicious stir fry of tender lamb's kidneys with sliced okra and leek in black bean sauce. Flavoursome and moreish, and pairs perfectly with hot steamed rice! Yumm!

Ingredients
  • About 400 grams of lamb's kidneys
  • 250 grams of tender okra
  • 1 medium sized leek
  • 1 spring onion
  • 2 garlic cloves
  • 3 cm of ginger root
  • 1 red hot chili
  • 2 TBSP of black bean sauce
  • 1 TBSP soy sauce
  • 1 TBSP Shoaxing rice wine
  • ½ tsp of raw sugar
  • ½ tsp of corn flour
  • cracked black pepper
  • 1 TBSP of cooking oil or lard
Instructions
  1. First, prepare the lamb's kidneys. Wash them and then with a very sharp knife, gently slice them into 5 mm discs. Cover them and put aside.
  2. Then, wash and slice the okra, leek, spring onion, garlic cloves, ginger and chili into thin slices. Put aside.
  3. In a small bowl, add the black bean sauce, soy sauce, Shoaxing rice wine, raw sugar and corn starch. Stir and mix well together. Put aside.
  4. In a wok/fry pan, add the cooking oil/lard. Turn the heat to medium. Add the sliced kidneys and stir fry until brown for about 3 minutes. Don't overcook. When the kidneys are brown/just cooked, remove them from the pan and place them in a bowl. Cover them and put aside.
  5. In the same pan, add the sliced garlic, ginger and chili. Stir fry until lightly browned. Add the sliced okra and stir fry for 1 minute. Add the sliced leek and stir fry for 1 minute.
  6. Add the kidneys back into the pan (including the juices) and gently stir through together. Add the sauce mix and cracked black pepper, and gently stir through.
  7. Add half of the sliced spring onions and gently stir through. Voila!! :D Your lamb's kidney stir fry is now ready to be served!
  8. Transfer to a serving bowl/plate. Garnish with the remaining sliced spring onions. Serve immediately with hot steamed rice. Enjoy your meal, bon appetit and sern saab! :D
